Alpha Tolman is an Alpine-style cheese named for a turn-of-the-century philanthropic dairy farmer in Greensboro, Vermont, made at Jasper Hill Farm's satellite production facility in the Food Venture Center. Upon arrival at The Cellars at Jasper Hill, the wheels are washed to cultivate a robust, rosy orange rind and to catalyze the development of flavers described by Jasper Hill Farm as "funky, meaty, and savory … becom[ing] more compact as the cheese ages in its own vault."
