Formaggella del Luinese is a semi-hard cheese, made exclusively with whole cow's milk and raw goat’s milk, coagulated with rennet, aged for a minimum of 20 days. The color of the dough is smooth and mostly white. The territory in which Formagella del Luinese is produced lies in the northern province of Varese in an area defined as “Prealpi Varesine.”
The name Formaggella del Luinese has protected status under European Union law.
