The term rind refers to the outside shell of cheese, which develops during the process of cheesemaking. The rind, which develops during the ripening process, serves as a protection from drying out and unwanted mold. It also gives each cheese its particular taste and smell. Natural rinds are usually edible, as opposed to such coverings as wax and cloth, also found on cheeses, which are inedible.
